Gluten Free Dark Chocolate Cherry Cookies.
Who says dessert can't be healthy? Who ever it was never had these cookies. ;) I love experimenting in the kitchen and trying to make healthier versions of desserts. Sometimes they don't always turn out like I want them to but this one was a winner! These are the perfect thing to take with you for in between school and cheer energy booster.
Ingredients:
Dry:
- 1 cup gluten free oats.
- 1/2 cup almonds
- 2 tablespoons gluten free flour
- 1/2 teaspoon salt.
- cinnamon
- 1/4 cup sugar or equivalent amount of stevia
- 1 ripe banana
- 1 large egg
- 1/3 cup vanilla greek yogurt
- 1/2 teaspoon of both vanilla and almond extract, or just 1 teaspoon vanilla
- 1/3 cup dried cherries
- 4 squares dark chocolate chopped or 1/3 cup chocolate chips
- non stick spray
Directions:
- Pre-heat oven to 350 degrees.
- Put the oats and the almonds into the blender, blend on high until it forms a flour.
- Transfer the oat and almond flour into a medium bowl and add the gluten free flour, salt, baking powder, and cinnamon. Mix well and set aside.
- In a larger bowl mash banana and add egg, yogurt, vanilla and almond extract, and sugar or stevia. Mix until well combined.
- Add the flour mixture into the wet mixture and mix until combined. Fold in chocolate pieces or chips and cherries.
- Drop dough onto a well greased cookie sheet, about a table spoon of dough per cookie.
- Bake cookies 12-15 minutes until edges are slightly golden brown.
- Let cool before devouring.
The best thing about these cookies are that they are 100% guilt free! Go ahead and reach for that second (or fifth) cookie! When made into 16 cookies each one has 78 calories, 3.5 fat, 17 carbs, 2 fiber, and 2 protein! Perfect for a mid afternoon snack or light breakfast. (cookies for breakfast? what?!)
